For those of you that know me, you will already know that my favourite dessert is tiramisu! I think it’s a super versatile dessert that can satisfy any sweet craving.
However, I had to say goodbye to this perfectly delicious sweetness because unfortunately it contains gluten, BUT, my wonderful resourceful half discovered gluten-free biscuits exist out there in the world (e.g. here) and decided to surprise me by making tiramisu as our Christmas dessert! It was perfect and, oh boy, we will be making this all the time!

Serves 4 hungry people
1 pckg of gluten-free savoiardi biscuits
2-3 shots of strong espresso and amaretto at will
optional but very Christmas-like: nutmeg and vanilla
Separate the eggs. Stir the Mascarpone, egg yolks and sugar until creamy (add some amaretto if you like). Beat the egg whites and combine with the Mascarpone mix. Pour espresso (and amaretto, if you like) into a flat dish – this will be used for soaking the biscuits. In individual glasses or a big, ideally rectangular bowl, start layering espresso-soaked biscuits and Mascarpone cream, always starting with the biscuits! Refrigerate for a few hours (overnight is ideal, but anyone can be forgiven for wanting to dig in as fast as possible), and sprinkle with cocoa powder (and nutmeg and/or vanilla, if you like) right before serving.
