Two Easy Potato Marinades

For the month go September I sat down and put together my a list of healthy foods and recipes which heal the thyroid and are anti-inflammtory. Potatoes are on this list. I thought it might be useful to share my top two easy potato marinades that will will turn your potatoes into crispy, flavourful, nutritional packed wedges.

The first marinade is easy to make and goes with pretty much any and all dishes. Double the batch and place one batch in the fridge for up to 4 days and bake the other batch.

Ingredients

  • 5-6 garden potatoes (peeled)

  • handful of cherry tomatoes (halved)

  • 3 garlic cloves (peeled and halved)

  • 1/2 tbsp salt

  • 1 tbsp pepper

  • 3 sprigs of thyme

  • 3-4 tbsps of olive oil

Directions

  • Boil the potatoes for about 10 minutes. Pour out the hot water and place them in a big bowl.
  • Add all the ingredients to the potato bowl and mix well. Let the marinade soak for about 10 minutes.
  • Place the marinaded potatoes on a baking tray and bake for 30-40 mins at 200C (392F) until they are crispy and golden brown.
  • Once they are golden brown, take them out of the oven and let them rest for 5 minutes before serving.

Notes

  • Tip: Right before I serve the potatoes I like to drizzle a bit of olive oil and add fresh ground pepper and a bit of Maldon salt.

The second marinade is flavourful, rich, and crispy. I turn to this recipe a lot – it’s a favourite around our house! And it’s also super easy to make. Let’s dive in.

INGREDIENTS

  • 6 russet potatoes (peeled and cut into wedges)
  • 3 tbsps olive oil
  • 1 tbsps dyjon mustard
  • Juice from 2 lemons
  • 1/2 tbsp salt
  • 1 tbsp oregano
  • 1 tbsp thyme
  • 3 garlic cloves (peeled and halved)
  • 1 tbsp apple cider vinegar
  • 3 tbsps of white vinegar

DIRECTIONS

  • Boil the potatoes for about 10 minutes in water and white vinegar. Pour out the hot water and place them in a baking pan.
  • Add the rest of the ingredients to the potato pan and mix well. Let the marinade soak for about 20-30 minutes. The longer it marinades the more flavourful they are.
  • Place the marinaded potatoes pan in the oven and bake for 30-40 mins at 200C (392F) until they are crispy and golden brown.
  • Once they are golden brown, take them out of the oven and let them rest for 5 minutes before serving.
